I'm doing stainless stick welding as a hobby project that I like to do in my spare time, but I have never done this kind of welding before. I'm about to tig weld stainless steel, I wonder what the difference is from regular stick welding. How about the material treatment? Is it different, too?

Stick welding stainless isn't too different from regular stick welding, but it's a bit trickier since stainless steel holds heat longer, so you'll need to watch your travel speed unless you want a warped mess. Use 308, 309, or 316 rods depending on the type of stainless you're welding, and keep the arc tight to avoid excessive spatter. As for material treatment, stainless forms a chromium oxide layer that gives it corrosion resistance, so if you overheat it or don't clean up the weld properly, you can ruin that protective layer. Post-weld cleanup with a wire brush or pickle paste helps restore corrosion resistance unless you want your stainless to rust like a cheap grill left out in the rain.
 
If I were you, I’d start by getting some scrap stainless and try both methods side by side. TIG will let you see how a small puddle behaves, how sensitive the arc is, how the filler rod works. For stick, choose the right electrode (stainless-rated) and keep your arc short. Also, after welding, you’ll want to do post weld treatment (pickling / passivation) on stainless to restore that protective surface.
